If you ask Bruce Feingold where is career in the restaurant industry began you will learn his successful journey started at the bottom of the “food chain” in the dish room at the age of thirteen. At age fifteen he had his first real restaurant experience in his home state of New Jersey at a family style restaurant The Iron Horse. It was here that he knew cooking was what he wanted to do and CIA in New York was where he would go to acquire the tools.
Being surrounded by 3 CIA alumni, and seeing a fellow line cook off to CIA, pushed Feingold to apply in tenth grade. After being on a two year waiting list he was accepted and graduated in 1990. Bruce then spent his externship with the #1 chef in the U.S. at the time, Mark Miletello at Mark’s Place in North Miami.
After his educating experience with Miletello, Feingold became Sous Chef at the Governors Club CCA Corporation in West Palm Beach. Feeling the need to use his valuable tools, and create something of his own, he opened Truce Bakery in West Palm Beach in 95’. In 1998 he acquired the position of Sous Chef at the Jupiter Island club in Hobe Sound. In 2000 he, Rodney Mayo, and Scott Frielich joined forces to open DaDa in Delray Beach which has been successful ever since. With the popularity of Dada and Feingolds’ cuisine they then decided to open or rather re-open Howley’s a 1950’s diner but with their own unique twist.
Just a few of Feingold’s accomplishments include being garlic Festival Dessert Champion, Citation of Excellence from the International Wine and Food Society Florida Chapter. Feingold also worked at the 2004 World Cup of Pastry in Las Vegas with 12 different countries, various Master pastry chefs, as well as M.O.F’s. In the spring of 2005 he worked with an Amish dairy farmer on a cheese farm development.
Bruce also dedicates much time to numerous charities including S.O.S (share our strength) and Reach for the Stars at the Kravis Center the last 5 years. In January of 2005 the company spearheaded a Tsunami relief benefit in which 100% of the revenue of all seven establishments was donated, totaling approximately $24,000. In 2009 our company raised money for Haiti relief and raised over $67,000 in a day.
